The Perfect Preparation

For One Pork Chop:
- 1 heritage pork chop, 15-16 oz (dry-aged if available)
- 1 tsp El Gaucho steak seasoning
- 2 oz apple compote (recipe below)
- 1 tbsp brown sugar cinnamon glaze (recipe below)
Brown Sugar Cinnamon Glaze (makes 8 servings):
- 2 cups apple cider vinegar
- 1 cup brown sugar
- 2 cinnamon sticks
Apple Compote (makes 5 servings):
- 2 Granny Smith apples
- 2 Fuji apples
- 2 oz clarified butter
- 1 cup orange juice
- 2 tbsp lemon juice
- 6 oz diced red pepper
- 2 tbsp brown sugar
- 1/2 tsp salt
- 1 tsp fresh thyme
- 1 tsp rosemary
Directions
For the Brown Sugar Cinnamon Glaze:
In a saucepan over low heat, combine the apple cider vinegar, brown sugar, and cinnamon sticks. Simmer gently until the mixture reduces by half, creating a thick, syrupy glaze. Set aside. The glaze can be stored at room temperature for up to 10 days – refrigeration will cause it to thicken too much.
For the Apple Compote:
Peel and dice the Granny Smith and Fuji apples. In a saucepan with clarified butter, sauté the apples and diced red pepper. Add orange juice, lemon juice, brown sugar, salt, fresh thyme, and rosemary. Bring to a simmer and cook until the liquid reduces to a sticky consistency and the apples are tender but still hold their shape. Store in an airtight container in the refrigerator for up to 5 days.
For the Pork Chop:
Season the heritage pork chop generously on both sides with El Gaucho steak seasoning. Grill over low heat to develop a nice crust, then transfer to a preheated 400-degree oven for 15-20 minutes, or until the internal temperature reaches 145 degrees. Let rest for a few minutes before plating.
To serve, spoon the apple compote alongside the pork chop and drizzle with the brown sugar cinnamon glaze.
